Since Mary mention using oatmeal in pancakes I thought I'd try it in my favorite Belgian Waffle recipe. The original recipe is from the instruction book from Sunbeam. Here it is with my changes:

1 egg yolk
1 cup (250mL) cour cream
1/2 cup (125mL) + 1/2 tablespoon milk
3 tablespoons (45mL) butter, melted
3/4 cup flour
1/4 cup oatmeal, well bleaderized
2 teaspoons (10mL) sugar
1 teaspoon (5mL) baking powder
1/2 teaspoon (2mL) salt
1/4 teaspoon (1mL) bakig soda
2 egg whites, stiffly beaten

Put all ingredients except egg whites in a large mixer bowl. Beat on low until moistened. Increase to medium, mix until smooth. By hand, gently fold in beaten egg whites. Pour a rounded 1/2 cup (125mL) of batter over grids.

I am NOT a cook, so my changes were merely a guess. I decreased the flour by 1/4 cup and added 1/4 cup oatmeal. I added the 1/2 tablespoon milk and added the extra egg white. I was concerned that the oatmeal would be heavier than the flour, hense my adding the extra milk and egg white.

I thought it turned out pretty good. I don't like pancakes (the texture) but I love waffles with jam and this turned out just fine. You'd never know that you added oatmeal. <img src="http://www.asklenore.com/ubbthreads/images/icons/smile.gif" alt="" />

Hope this helps someone else out there who may not enjoy oatmeal or just wants to try something different!
